Hyderabadi Veg.Biriyani

Ingredients:
- 1 cup of Basmati rice
- 1 Onion chopped
- 2 cups of Diced vegetables (Beans, peas, potato, carrots, etc…)
- 1 cup curd
- salt
- coriander leaves
For Masala:
- 1/2 Onion
- 8 Green chillies
- 4 Cloves
- 1″ Cinnamon stick
- 1″ piece of Ginger
- 2 tsp dry coconut
- 2 Garlic pods
- 2 Cardamoms
- 7 Cashew nuts
- 1 tsp Biriyani Masala
- 1 Bay leaf
Preparation Method:
1.Wash the rice.Drain all water and keep aside.
2.Heat 1/2 tsp ghee on a medium flame, add rice and fry for 5 mins.
3.Put all masala ingredients in a blender and grind them to fine paste.Keep it aside.
4.Heat oil in a cooker(or pan) add onions, ginger garlic paste and fry for few mins.
5.Add masala paste and fry it for some time ( wait for oil toseparate).
6.Then add all diced vegetables and fry it for some more time till tender.
7.Take curd and beat it nicely. Add these curd along with one cup of water (as required) to cook rice and bring it to boil. Add salt and fried Basmati rice, cover the lid and reduce flame. cook rice till done.
8.Garnish this Hyderabadi Biriyani with chopped coriander leaves and fried cashews.
9.Serve hot with raita,lemon and cucumber. ![]()
